With Easter just around the corner, I thought it a good time to honor my favorite mischievous bunny.
These Peter Rabbit Pots will make a cute addition to your table, or drop them in a cellophane bag for a treat to share.
The ingredients are simple- one box of angel food cake mix, one box of chocolate cake mix, edible grass, candy eggs, Peeps rabbits, cupcake liners, toothpicks and small individual terra cotta pots.
Take both dry cake mixes and mix them together in a gallon size zipper bag. This will provide you with many, many delicious microwave cakes. The general directions are to mix 3 tablespoons of mix and 2 tablespoons of water in a mug and microwave for one minute. De-lish! However, the directions are slightly different for the Peter Rabbit Pots.
Clean and dry your terra cotta pots. Place a cupcake liner inside the pot, so that the top of the liner is just below the top of the pot. For each pot, mix together 1 1/2 tablespoons of dry cake mix and 1 tablespoon of water; microwave for 1 minute.
You have now finished the most difficult part of this dessert! Break up your edible grass and spread it across the top. (Feel free to mix a little “glue” from a tablespoon of powdered sugar and a teaspoon of water. It will keep your grass from sliding around on the dirt.) You may also use shredded coconut and green food dye to make your own edible grass.
Nestle a few candy eggs in your grass.
Use a toothpick to secure your marshmallow rabbit in place. Dig in and enjoy!
