These pickles are super simple to make and the cold process keeps them extra crispy. The flavor is slightly reminiscent of bread & butter pickles.
8 Kirby cucumbers (also known as pickling cucumbers)
1 1/2 tablespoons kosher salt
5 tablespoons sugar
1 cup white wine vinegar
1/4 cup Bel-Gin Strong (p. 88 of book), or any Belgian ale
1 tablespoon coriander seeds
1/2 tablespoon juniper berries
Cut the cucumbers in half lengthwise, then in half again to get four spears per cucumber. In a medium bowl, whisk together the salt, sugar and vinegar until the sugar has dissolved. Add the beer, coriander seeds, and juniper berries to the mixture. Pack the cucumbers into a glass container with a tight-fitting lid (a clean reused pickle jar would be great) and pour the mixture over the cucumbers. Top off with cold water until the cucumbers are submerged. Refrigerate for 3 days before eating. These will last for 3 weeks in your fridge.
I used a wide-mouthed quart jar, but was not able to get all the cucumbers (or liquid) into the jar. You either need a really large jar, or divide it into two jars. I would also recommend pouring a bit of the liquid and spices in the bottom of the jar before packing the cucumbers, otherwise you end up with all of the spices on top of your pickles.
