Monday Munchies: Magical Movie Night Crunch

Today’s Munchie was supposed to be a Paddington Bear inspired Italian treat.  It is very simple- less than a half dozen ingredients, of which I have two. Is it time to visit the grocery store? I think so!

I know that there are thousands of people furiously clicking “refresh” as they seek my culinary wisdom, so I have pulled one of our favorite movie night recipes to share.  Stir up a batch and sit down to your favorite holiday movie marathon. (If you like a less sticky popcorn, try our shake on popcorn toppings.) Our absolute favorite version uses raspberry gelatin and dried apple pieces.  It is delicious!

Ingredients:

1- 2.9 ounce bag microwave popcorn, popped

¼ cup butter

1/8 cup light corn syrup

¼ teaspoon salt

1/8 cup water

¼ cup white sugar

1- 3 ounce package fruit flavored gelatin mix, your favorite flavor

¼ teaspoon baking soda

Optional: ½ cup mix-ins, such as nuts, candy or dried fruit pieces

Directions: Pre-heat oven to 200˚.

Pour popped popcorn into a 9×13 glass dish.

In a small saucepan over medium heat, combine butter, corn syrup, salt, water, white sugar and gelatin mix.  Bring to a boil and
maintain boil for 5 minutes.

Add baking soda to mixture and stir until foamy.  Pour foaming mixture over popcorn and use a wide spatula to stir and coat
popcorn.  If you wish to add mix-ins, add at this point.

Bake for one hour, stirring every 15 minutes.  Remove from oven and allow to cool.  Break apart and enjoy.

    Ooh, this sounds good. My daughter and I just read a bunch of Paddington books, and I don’t remember this in there. If hubby liked popcorn, I would try this for sure.:)
