Monday Munchies: Twilight Bleeding Cupcakes

Oh, my! Once again Monday snuck up before our post was ready.  If you remember, last Monday’s post was written by Word Nerd Teen on Tuesday, because I spent Monday in the emergency room.  Apparently I have mononucleosis, and once you get over the feeling like you are dying, it just makes you tired.  Very, very tired.  Thankfully, Word Nerd Teen and Teen Geek are on hand to help and we managed to put together a decent recipe and a picture….with their help, things should be back on schedule soon. (Tiny moment to gloat- I have really good kids.)  On to our regularly scheduled feature…

There is a movie opening this week that is based on a little series of books you may have seen around your local bookshop.  Breaking Dawn, the fourth, final and worst book of The Twilight Saga, comes to every theater near you this week.  We can be thankful that as each subsequent book in the series deteriorates, the movies seem to get better, so go ahead and get ready for your Breaking Dawn midnight opening party with our Twilight Bleeding Cupcakes.

Ingredients:

3/4 cup unsalted butter, softened

1 cup granulated sugar

1 teaspoon vanilla

1 1/2 cups unbleached flour

2 teaspoons baking powder

1/2 teaspoon salt

1/4 cup seedless raspberry jam

1/4 cup Karo light corn syrup

whipped cream

Preheat oven to 400° and prepare 12 cupcake liners.

Mix together butter, sugar and vanilla until fluffy.  In a separate bowl, whisk together 3 eggs and set aside.  In a third bowl, sift together flour, baking powder and salt.  Alternate adding eggs and flour to butter/sugar mixture until thoroughly incorporated.  Add batter to cupcake liners. (Batter will be very thick.) Use the back of a moistened spoon to create a little well in each cup of batter.

In a small bowl, whisk together jam and Karo syrup. (I think it would probably work just as well to use strawberry ice cream topping, but I did not try the recipe that way.)  Place a healthy dollop of mixture in each cupcake batter well.

Bake for 12 minutes and remove from oven to cool.  Cover cooled cupcakes with whipped cream.  Have a bloody good time.
