Grapes of Wrath Muffins (adapted from here)
2- 1/4 cups unbleached all-purpose flour
1- 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup butter, salted
3/4 cups granulated sugar
2 eggs
2 teaspoons vanilla powder
1/2 cup whole milk ricotta cheese
zest from one small orange
1- 1/2 cups red grapes*
Preheat oven to 375° and prepare 12 muffin cups.
In a small bowl, blend together flour, baking powder, baking soda and salt. Set aside.
Cream together butter and sugar. Add eggs, vanilla powder and ricotta cheese, mix until smooth. Stir in dry ingredients until just moistened (do not beat!). Fold in orange zest and red grapes.
The “batter” will be very thick and doughy. Scoop 1/4 cup mounded dough into each muffin cup. Bake for approximately 18 minutes, or until toothpick inserted in the center comes out clean.
*The jury is split on whether or not the grapes should be cut. My side thinks that the juicy burst from the whole groups is what makes the muffins great, while the dark side thinks they should be halved before going into the mix.

These taste great! I love the way the grapes maintain that delicious “snap!” when they’re bitten into! I never would have thought to try this before.

I never knew you could make your own cupcake liners! How cute are those?! I have to say, every mention of the Grapes of Wrath makes my insides die a little because it was one of the only books in high school that I couldn’t stand. Maybe now, as a more grown up person, I’d appreciate it more.
